Strawberry Salad

Course Salad



  • 4 cups of baby spinach
  • 8 medium-sized strawberries tops removed and quartered
  • 3 oz honey goat cheese crumbled
  • 1/4 cup chopped nuts I use either walnuts, pecans or slivered almonds
  • Rhubarb Vinaigrette

Rhubarb Vinaigrette

  • 1/4 cup Rhubarb Shrub you can substitute other flavored kinds of vinegar
  • 1/3 cup olive oil
  • 1 teaspoon honey
  • 1/2 tsp kosher salt


  • In a large salad bowl add spinach. Top with strawberries, goat cheese and nuts.
  • In a small mason jar, combine vinaigrette ingredients (shrub, oil, honey, and salt.) Place lid on the jar and shake to completely combine.
  • Drizzle lightly over salad.
