- Preheat oven to 400 degrees. 
- Roll out puff pastry on parchment paper to about 15 inches wide. 
- Spread softened goat cheese over the puff pastry. 
- Mix sugar, brown sugar and cinnamon, in a bowl 
- Sprinkle sugar mixture on puff pastry 
- Scatter chocolate chips on puff pastry 
- .Starting with one end roll the dough tightly into a log shape. 
- Place in the fridge and allow to chill for at least 30 minutes. 
- Using a serrated knife, carefully slice ½ inch slices and place on a baking tray. 
- Place on center rack in the oven, and cook for approximately 15 minutes or until golden brown. 
- Cool for 5 minutes before adding frosting
