Caramelized Onion, Goat Cheese and Potato Pizza

  • 1 pizza dough ball either homemade or store-bought
  • extra virgin olive oil
  • 2 small Yukon gold potatoes
  • 1/4 cup shredded swiss cheese
  • 3 tablespoons caramelized onions
  • 1 teaspoon dried or fresh sage leaves
  • 2 ounces of Humble Goat Cheese
  • Kosher salt and cracked black pepper to taste


  • Slice the potatoes into 1/8” slices.
  • Boil potato slices for 6 minutes until tender


Assemble pizza
1. Stretch the pizza dough to an approximately 10” circle, then brush with a thin layer of olive oil.

2. Spread shredded swiss cheese around the pizza dough.
3. Drop the caramelized onions evenly across the dough, leaving the outer rim clean.
4. Top with the parboiled potato slices, the Sage leaves, and the 2 ounces of The Humble Goat Cheese
5. Sprinkle Kosher salt and grind fresh black pepper to taste
6. Transfer onto a parchment-lined cookie sheet and bake until the crust is golden-brown and the cheese is bubbly, rotating once halfway through the cooking time.
