Early Spring Radish, Cucumber and Goat Cheese Salad
Ingredients
For the Dressing:
- 1 Tbsp minced shallots
- 2 tsp white wine or champagne vinegar
- 2 tsp honey
- 1/2 tsp kosher salt
For the Salad:
- 1 large English or 4 small Persian cucumbers thinly sliced
- 12 radishes thinly sliced
- 3 stalks of celery with leaves thinly sliced
- ¼ cup minced dill
- ¼ cup minced green onions green parts only or chives if you the the blossoms they are pretty to use too
- 3 Tbsp chopped mint
- 4 ounces The Humble Goat Goat Cheese
Instructions
Make the dressing:
- In a salad bowl, combine olive oil, shallots, vinegar, honey, and kosher salt shake in a mason jar to
- blend
Make the salad:
- Combine cucumber, radishes, celery, dill, chives or scallions, and mint in the bowl with the dressing. Toss to combine. Top with crumbled goat cheese, freshly cracked pepper, and a sprinkle of salt. Serve immediately.
