Early Spring Radish, Cucumber and Goat Cheese Salad


For the Dressing:

  • 1 Tbsp minced shallots
  • 2 tsp white wine or champagne vinegar
  • 2 tsp honey
  • 1/2 tsp kosher salt

For the Salad:

  • 1 large English or 4 small Persian cucumbers thinly sliced
  • 12 radishes thinly sliced
  • 3 stalks of celery with leaves thinly sliced
  • ¼ cup minced dill
  • ¼ cup minced green onions green parts only or chives if you the the blossoms they are pretty to use too
  • 3 Tbsp chopped mint
  • 4 ounces The Humble Goat Goat Cheese


Make the dressing:

  • In a salad bowl, combine olive oil, shallots, vinegar, honey, and kosher salt shake in a mason jar to

Make the salad:

  • Combine cucumber, radishes, celery, dill, chives or scallions, and mint in the bowl with the dressing. Toss to combine. Top with crumbled goat cheese, freshly cracked pepper, and a sprinkle of salt. Serve immediately.
