Crumbled Goat Cheese Spring Greens Salad

Ingredients
  

  • 2 oz plain chevre crumbled goat cheese from The Humble Goat.
  • 5 oz spring mix greens arugula, baby kale, red oak, spinach, etc.
  • ½ cup heirloom cherry tomatoes halved
  • A small handful of microgreens ex: radish or pea shoots
  • Salt & pepper to taste
  • Optional Not shown, but works beautifully:
  • 1 tbsp toasted seeds or nuts e.g., sunflower seeds or sliced almonds
  • Thinly sliced cucumber or red onion for crunch
  • Simple Vinaigrette:
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white balsamic or champagne vinegar
  • ½ tsp Dijon mustard
  • Pinch of salt and pepper
  • Whisk or shake in a small jar until emulsified.

Instructions
 

  • Make the dressing: Whisk all vinaigrette ingredients together until smooth.
  • Toss the salad: In a large bowl, combine the spring greens and halved tomatoes. Drizzle with vinaigrette and toss gently to coat.
  • Add the cheese & greens: Plate the salad and dot with crumbled goat cheese Top with microgreens for a final fresh touch.
  • Season & serve: Finish with a pinch of salt and freshly cracked black pepper. Serve immediately.
