2beef burger patties1/3 lb each, or your preferred size
½cuppickled red onionsstore-bought or homemade
1fresh jalapeñothinly sliced

Instructions
Prep the Buns
o Lightly butter and toast the brioche buns cut-side down in a skillet until golden.
Cook the Patties
o Season burger patties with salt and pepper.
o Grill or pan-sear over medium-high heat until desired doneness (about 3–4 min per side for medium).
Assemble the Burger
o Bottom bun: layer with pickled red onions and fresh jalapeño slices.
o Add the hot burger patty.
o Immediately top with crumbled goat cheese — it will soften slightly from the heat.
o Top with the toasted bun.
Serve
o Serve hot with kettle chips, fries, or a simple green salad. Add extra jalapeño slices on the side if you like it spicy.
Notes
Let the burger rest 1 minute before serving so the goat cheese just starts to melt but still holds texture — that creamy tang really pops against the smoky beef and zippy toppings.
