In a large mixing bowl, whisk together eggs and half & half.
Finely chop parsley and chives
Add parsley and chives to egg mixture along with dried thyme
Add salt and pepper to taste along with lemon juice and combine
Lay pie crust in pie pan
Crumble goat cheese until covering the bottom of pie crust
Slowly and evenly pour egg and herb mixture into pie pan, taking care not to overfill
place in oven at 375° for 30-35 minutes or until crust and edges are golden brown
Let sit for 10 minutes and serve
