Goat Cheese Galettes
Ingredients
- Crust:
- ⦁ 1 1/2 cups of flour
- ⦁ 1 tbsp sugar
- ⦁ 1/2 tsp kosher salt
- ⦁ 1 stick cold butter
- basil garlic oil:
- ⦁ 2 tbsp extra virgin olive oil
- ⦁ 1 clove garlic
- ⦁ 1 tbsp chopped basil
- Filling:
- ⦁ 1 4 oz log of plain The Humble Goat goat cheese
- ⦁ 2 cups cherry tomatoes
- ⦁ Everything Bagel seasoning
Instructions
- Heat oven to 400°
- Add your halved cherry tomatoes to a bowl with 1 tbsp of salt and set aside.
- Add dry ingredients to a food processor with butter and blend until the butter is in pea-sized pieces
- Slowly add ice water to the mixture, until it comes together
- It will look crumbly, but once you press it together it sticks!
- Turn the dough onto a floured surface, roll it into a ball, and wrap in plastic wrap
- Store it in the fridge until you are ready to use it.
- Add the chopped basil and garlic to a bowl of olive oil and mix
- Microwave your goat cheese until it is easy to spread
- Take your dough and roll it out until it is about ⅛ inch thick.
- Cut circles in the dough to be the base for the galettes.
- Spread the goat cheese over each circle, leaving about 1 inch at each border.
- Pinch the dough around the edge – it doesn’t need to look pretty.
- Add the tomatoes on top.
- Brush the galette with your oil mixture, and add the Everything Bagel seasoning.
- Bake for 25-30 minutes.
