OUR CHERRY GOAT CHEESE CHEESECAKE‼️
FOR THE PISTACHIO CRUST
1 heaping cup shelled, roasted, and salted pistachios (See Recipe Notes)
1/4 cup granulated sugar
3 tablespoons unsalted butter, melted
FOR FILLING
3 logs (12 oz) of humble goat cherry goat cheese, room temperature
1/4 cup granulated sugar
1/2 cup (4 ounces) crème fraîche or full-fat sour cream, room temperature
2 tablespoons maple syrup
1/4 teaspoon vanilla bean paste or pure vanilla extract
Pinch of fine sea salt
3 large eggs
FOR CHERRY COMPOTE
1 1/2 cups fresh or frozen cherries, pitted
1/2 cup sugar
Juice of 1 lemon
Combine the cherries, sugar, lemon juice, and water in a saucepan over medium heat. Bring to a simmer, stirring occasionally, and cook for 10–15 minutes until the cherries break down and the mixture thickens. Mash some of the cherries with the back of a spoon for a jammier texture. Remove from heat and let cool — it’ll thicken more as it sits. Store in the fridge for up to a week.
For the crust, process the pistachios and sugar in a food processor until finely ground. Transfer to a bowl, stir in the melted butter until the mixture resembles wet sand, then divide among 12 wells of a mini cheesecake pan (or a mini muffin pan with liners), pressing firmly into the bottoms.
Preheat the oven to 400°F and chill the crusts in the fridge while it heats. Bake for 10–12 minutes until set, then let cool completely before filling.
Lower the oven temperature to 300°F. Combine the goat cheese and sugar in a food processor and process for 1 minute, then add the crème fraîche, honey, vanilla, and salt and process for another 30 seconds, scraping down the sides as needed. With the processor running, add the eggs one at a time through the feed tube, mixing just until combined — don’t overmix. (No food processor? Whisk everything by hand in the same order.)
Pour the filling into an oven-safe pan and bake for 18–20 minutes, until just barely set. Cool to room temperature, then refrigerate for at least 4 hours before serving.
