Ingredients
2 cups peanut butter, can be subbed for alternative nut butters
½ cup brown rice syrup, can be subbed for agave or maple syrup
1 1/12 cups oat flour
1 cup The Humble Goat vanilla Protein powder

Chocolate Topping
1/3 cup chocolate chips
1 teaspoon coconut oil

Instructions
1. Line an 8 x 8 inch loaf pan or cake tin with parchment paper and set aside. 
2. In a mixing bowl, add the oat flour and vanilla protein powder and set aside. 
3. In a microwave-safe bowl or on the stovetop, combine the peanut butter with brown rice syrup and melt together. Whisk to ensure it is combined. Pour into the dry mixture and mix until fully incorporated. If the batter is a little crumbly, slowly add water until it is smooth.
4. Pour the batter to a lined baking dish and press firmly into place. Refrigerate for at least 20 minutes to firm up. 
5. While the bars are firming up, melt the chocolate with coconut oil and drizzle over the top. Let it set before slicing.

• 2 tbsp The Humble Goat vanilla Protein Powder
• 2 tbsp Joy Filled Eats Sweetener or alternative sweetener
• 4 tbsp salted butter

Filling Ingredients:
• 16 oz 4% fat cottage cheese
• 8 oz cream cheese
• 1/2 cup The Humble Goat vanilla Protein Powder 
•3/4 cup Joy Filled Eats Sweetener or alternative sweetener
• 1 tsp vanilla extract
• 5 eggs

Instructions
1. Preheat the oven to 350. In a large food processor pulse the almond flour, protein powder, 2 tablespoon sweetener, and 4 tablespoon butter until a coarse dough forms.
2. Press into the bottom of an 8-inch springform pan to form a crust. Bake for 8 minutes.
3. Reduce the oven temperature to 275.
4. Meanwhile, combine the cottage cheese and the cream cheese in the food processor (you don’t need to wash the bowl). Pulse the cheeses until smooth. Add the protein powder, sweetener, and extract. Mix until combined.
5. Add the eggs. Blend until smooth. You will need to scrape down the sides. Pour over the crust.
6. Bake for 90 minutes until the center no longer jiggles when the pan is lightly shaken. Cool completely. Refrigerate for at least 4 hours before serving.

1. Add the eggs, oats, cottage cheese, and protein powder into a high speed blender. Blend very well until smooth and no clumps remain.
2. Heat a waffle iron as per the box directions. Once hot, pour spoonfuls of the batter to cover the iron. Cook the waffle until crispy on the edges. Remove from the waffle iron and cook the remaining batter.
3. Serve the waffles immediately with your favorite sweet or savory toppings.
