Blueberry Chevre Humble Hand Pies

Instructions
  1. 1. Preheat oven to 400 degrees. Stir together Blueberry Chevre, 1/2 cup of sugar, and 1 egg until smooth.
  2. 2. Prepare an egg wash – beat 1 egg and a splash of water
  3. 3. Take pie crusts and cut each one into 9 pieces with a pizza cutter (2 horizontal cuts and 2 vertical cuts)
  4. 4. Spoon 1 heaping spoonful of blueberry chevre mixture into center of each piece of dough. Brush edges with egg wash and bring opposite corners together to form triangles; trim if needed. Crimp edges with a fork to seal, and brush top with egg wash. Repeat with remaining dough and filling. Place on greased baking pan.
  5. 5. Cut a small vent in each pie and bake until golden, 20 minutes, rotating sheets halfway through. Let cool completely before serving.
